Watch VNA’s WIC Nutritionist Victor Mendez craft a delicious holiday breakfast full of fiber and antioxidants.
Here’s the recipe for his festive apple oatmeal (all toppings optional!):
1 apple
½ Cup of instant oatmeal
1 cup of water
1 Tbsp. peanut butter
4 tsp. ground cinnamon
1 Tbsp. brown sugar
2 tsp. brown sugar (topping)
Cube/cut half of your apple to your liking. The other half you may cut into slices and set aside.
Next, combine the oatmeal, half of the cubed/cut apple (equivalent to ¼ of the apple total), water, 3 tsp (equivalent to 1 Tbsp.) of cinnamon, and 1 Tbsp. brown sugar. Microwave
in a microwave safe container for 1 minute and 10 seconds.
Once it’s out of the microwave, let it rest for 1 minute. Add in 1 Tbsp. of peanut butter (or less if you don’t want as much peanut butter) and mix.
In a separate small bowl, add remaining cubed/cut apple pieces with a few of the apple slices on the bottom. Add prepared oatmeal on top of the remaining fruit. Take the remaining 1 tsp of cinnamon and 2 tsp of brown sugar and sprinkle on top as a topping. Heat in the microwave for an additional 20 seconds.
Stick any remaining slices of apple into your oatmeal for a nice toppin and enjoy!
